Thai-Style Lemon Grass Shrimp With Papaya Mango Salad

Lemon Grass Shrimp

 

This is a must-do, fabulous recipe that is full of beautiful flavors.  I came across this recipe while flying and glancing at the in-flight magazine. There I found this wonderful gem of a recipe that will dazzle and delight. 

 

Ingredients

1/2 serrano chili pepper, chopped

2 shallots, peeled and chopped

3 tbsp. fresh ginger, peeled and chopped

(about 2inches of ginger root)

3 tbsp. lemongrass paste

3 cloves of garlic

3 tbsp. of brown sugar

1tsp. turmeric

1 tbsp. fresh cilantro, chopped

1/4 tsp. ground black pepper

1frozen kaffir lime leaf, chopped

2 tbsp. fish sauce

2 tbsp. lime zest

1/4 cup lime juice

1 cup olive oil

12 raw shrimp 16/20 count, shelled and cleaned

 

Green papaya mango Salad

 2tbsp. fish sauce

1/4 cup of fresh lime juice

2 tbsp. fresh basil chopped

1 tbsp. fresh cilantro, chopped

2 cups fresh papaya, shredded

1 fresh mango sliced into matchsticks

1 bunch of green onions sliced on a bias into 1-inch pieces

2 Roma tomatoes, sliced into matchsticks

Directions

In a blender add all ingredients except the shrimp.  Blend until smooth to make the marinade.  Add raw shrimp to a medium bowl.  Pour marinade over shrimp and gently toss until all the shrimp are evenly coated.  Cover and place in the refrigerator for 4 hours.

 Directions 

Green Papaya Mango Salad

 

In a small mixing bowl, combine the fish sauce, lime juice, basil and cilantro o make the dressing.  whisk until well combined.

In a separate bowl, combine the green papaya, mango green onions, and tomatoes.

 

Drizzle dressing over the top of the salad.  Gently toss to coat.

                                            

Plating

Place salad with 3 to 4 pieces of chilled shrimp.
